Turning into the hilly tourist road from Ipplis toward a soft rise, you come to the centre of the centre of the Azienda Agricola Scubla that stands out over the vineyards, which surround it at 360° and that slope inwards towards the woods lining the bottom of the valley. But, besides the technologies in the cellar and the skilful hand of man, it is the soil that plays a leading role characterising this area and its wine. It mainly consists of a particular marl called "ponca" that crumbles under the sun and rain making it extremely rich with microelements and salts. The wine can thus express everything it has enclosed within it, becoming really typical, characterised, full of perfumes and body, able to arouse pleasant sensations in the profane and the connoisseurs.
The cellar and the farmhouse, located on the highest point in the farm, have been completely renovated in the respect of tradition, but at the same time the operating areas have been provided with the best and most modern technological means.
Here the line of classic whites is developed in thermo-conditioned stainless-steel barrels to impart to the wines made from single varieties the most typical characteristics of their strain and the fruity expression of the grapes.
There is also an underground cellar that enjoys a naturally balanced temperature ideal for refining the wines in barriques and tonneaux; a place of enhancement for reds such as the Scuro but also for the Graticcio raisin wine and the Pomèdes blend of white varieties.
