Description

Our firm was born in 1991 from a strong passion supported by the ten-year oenological experience of Mauro Sebaste, son of Sylla, a famous woman and a true Langa wine expert.

After Sylla's premature death, Mauro, leaves the family's firm and, urged by his strong passion for wines, he pursues a single objective: producing quality wines.

Therefore, with his wife Maria Teresa's and his parents-In-law's help, he sets up a new firm and designs a wine-producing activity not bound to land and personally owned vineyards.

To carry out his plan, he starts with a slow, meticulous search for vineyards: each of them with suitable features of typicality, geographical location and exposure. Then he makes important contacts with several farmers and land owners and offers them his own competence, together with his collaborator and friend's one, the agronomist Dottor Domenico Franco.

Nowadays Mauro manages about twenty hectares of vineyards scattered throughout the Langhe and Roero Districts. He follows ripening cycles with absolute devotion and care by cooperating with his suppliers in order to reach one and only objective: producing total and uncompromising quality.

With oenologist Dottor Giovanni Bailo's precious help, Mauro Sebaste follows all the production stages, from grapes ripening up to wine bottling.

Nowadays his family firm produces an average of 150,000 bottles of wine a year and 15,000 bottles of grappa which he exports all over the world.

The vineyards where the MAURO SEBASTE wines are produced have been chosen for their excellent land features and favourable exposure. They are located on the best Langhe and Roero farms: Alba, Barolo, La Morra, Verduno, Serralunga, Monforte, Canale, and Vezza d'Alba.

Mauro Sebaste personally runs the vineyards: he checks the soil quality, he carefully sees to the thinning of the exceeding grapes with regards to the capacity of each vine to bring its grapes to perfect ripening and he also engages himself in limiting treatments to the minimum required.

Every year, after checking the grapes ripening and choosing the perfect climatic conditions, he organizes the harvest (still strictly manual) and supervises it by carefully selecting grapes.

The wine-making process takes place in the firm's cellar, carefully designed and equipped with the most innovative oenological technology.

As soon as the grapes arrive from the vineyard, after undergoing a further manual selection which is carried out on vibrant tables, they are gently pressed.

The must is then treated with a peristaltic pump which pushes it forward without actually touching it and is then let to ferment in stainless steel tanks equipped with a automatic temperature check device.

After maceration, the wine is aged in perfectly sterilized barrels by means of an ultraviolet lamp treatment.

When the wine is ready, it is bottled by using a very modern bottling line which ensures quality and guarantees total hygiene to the whole production.

After proper ageing, the wine can be tasted in the comfortable tasting room where Mauro Sebaste and his wife welcome their guests.
